The Aji Amarillo chilli is thought to have originated in Bolivia or Peru and it is believed to have domesticated in Peru about 2500 B.C. Particularly good for infusing oils and vinegars, its also great for use in sauces and marinades.

Itâ€s brilliant for fruity salsas (try it in a mango, prawn and chilli salsa) and tomato sauces. It smacks of summer with its tropical flavour. Hot but not too intense. Quantity: 25g

Scoville Rating: 2500-3000 Country of Origin: Mexico A large triangular, dark pepper which is the dried version of the popular Poblano Chilli. Extremely popular in Mexico this is a must have ingredient in Enchiladas. This is a mild, sweet chilli with a deep almost chocolatey flavour that adds richness to cooking. Like the Guajillo this large fleshy pepper needs a longer soak/cook to fully release its flavour but it's worth the wait. A good tip for a fuller flavour is to lightly toast the pepper on a hot pan before use.

This pepper was named after the Cayenne River in South America. Today, what most people refer to as "cayenne powder" may or may not be made from cayenne peppers. This versatile pepper can be thrown whole into a stew where it will impart heat and flavour or is great crushed and used as a condiment.

Scoville Rating: 3,500 – 4,500 Country of origin: Mexico The chipotle is not a variety of chilli but a dried, smoked red Jalapeno. Smoking is the traditional Mexican way of preserving Jalapenos. It has a rich smoky aroma with undertones of dark chocolate and tobacco. A perfect balance of fire and flavour it adds real depth to dishes. An inspired seasoning for soups, stews, salsas, BBQ sauces and mayos. Soak them in hot water for a few minutes and they rehydrate for adding to the pot. Quantity: 50g

A classic Mexican chilli pepper, much used in many Mexican dishes, but also the chilli that adds the heat to the North African Harrisa paste. Milder in heat than its cousins and with a sweet flavour this large fleshy pepper needs longer cooking/soaking time than most but it's worth the wait. A good tip for a fuller flavour is to lightly toast the pepper in a hot pan before use. Quantity: 25g

Add hot water and the chilli is back in shape in a few minutes, retaining all the flavour and heat of a fresh pepper. Remember a little goes a long way - use with caution as these are seriously hot.
