Similar to the Ancho with a complex flavour, this mild large pepper is the dried version of the Poblano varieties of chillies. With subtle elements of liquorice, cherry, raisins and tobacco it is great as a base for sauces or marinades as well as adding richness to sauces. Our tip is to soak one, chop it finely and add it to a bolognaise to transform an ordinary spag bol to something special. Its also great ingredient for use with the huge variety of delicious Poblano Chicken recipes.

Mild and sweet, with a rich chocolatey flavour this is an ideal pepper to add depth and richness to stews and chilli dishes. This large fleshy pepper needs a good soak/cook to fully release its flavour but it's worth the wait. A good tip for a fuller flavour is to lightly toast the pepper on a hot pan before use.
