The Aji Amarillo chilli is thought to have originated in Bolivia or Peru and it is believed to have domesticated in Peru about 2500 B.C. Particularly good for infusing oils and vinegars, its also great for use in sauces and marinades.

Scoville Rating: 2500-3000 Country of Origin: Mexico A large triangular, dark pepper which is the dried version of the popular Poblano Chilli. Extremely popular in Mexico this is a must have ingredient in Enchiladas. This is a mild, sweet chilli with a deep almost chocolatey flavour that adds richness to cooking. Like the Guajillo this large fleshy pepper needs a longer soak/cook to fully release its flavour but it's worth the wait. A good tip for a fuller flavour is to lightly toast the pepper on a hot pan before use.

It has a rich smoky aroma with undertones of dark chocolate and tobacco. A perfect balance of fire and flavour it adds real depth to dishes. Add hot water and the chilli is back in shape in a few minutes, retaining all the flavour and heat of a fresh pepper. Remember a little goes a long way - use with caution as these are seriously hot.

Similar to the Ancho with a complex flavour, this mild large pepper is the dried version of the Poblano varieties of chillies. With subtle elements of liquorice, cherry, raisins and tobacco it is great as a base for sauces or marinades as well as adding richness to sauces. Our tip is to soak one, chop it finely and add it to a bolognaise to transform an ordinary spag bol to something special.
