Add to soups, stews or curries. What we say... This sauce is based on traditional caribbean sauce known also as 'oil down'. After the coconut flesh has been finely grated, it is mixed with a little water and strained. This milky liquid is then poured over salted mackerel (or vegetables). Seasonings are added and this sauce is cooked slowly until reduced. The chaps at Walkerswood have made this process a whole lot easier - spices are already simmered in creating a beauifully rich cooking sauce with just a hint of the all important scotch bonnet chilli. This sauce is also a superb marinade for chicken or seafood salads. Warm and pour over. Makes a spicy dressing when mixed with oil. What we say... Another sauce unique to the Caribbean, although this is actually derived from Spanish 'Ceviche' - a method of pickling raw fish. Traditionally fish is deep fried and warm pickle sauce is poured over and left to stand overnight or eaten immediately. This dish is also delicious if refrigerated and served cold.
