Consultant winemaker Herve Saberdeil has lived all his live in this region of France and relishes the fact that he can make top quality wines from local grape varieties. To make this clean, fresh-tasting white, he uses grapes from ancient Maccabeu vines. Aged up to 90 years old, these gnarled vines give VERY low yields, resulting in a beautifully concentrated, richly flavoured wine. Herve then adds a dash of much-loved Sauvignon Blanc to give extra zest and zing ... we think you'll love it! Antonio Sergi, Warburn Estate's lead man, is also owner of the goats ... hence his affection for the name! The rich, red soil does have more important uses too - helping deliver outstanding Merlot and Cabernet grapes. Wine lovers the world over know of South Australia's legendary 'terra rosa' soil that produces such superb wines in the Coonawarra.
