Consultant winemaker Herve Saberdeil has lived all his live in this region of France and relishes the fact that he can make top quality wines from local grape varieties. To make this clean, fresh-tasting white, he uses grapes from ancient Maccabeu vines. Aged up to 90 years old, these gnarled vines give VERY low yields, resulting in a beautifully concentrated, richly flavoured wine.
