When the current owners of Vaqueria took over the estate they found neglected Bordeaux vines from the late 1900s in virtual ruin. Months of painstaking restoration and heavy investment has paid off. The vineyards have returned to their former glory and are now producing exceptionally ripe, concentrated fruit and the property is waiting to gain officially recognised status as an organic producer. Founded in the early 19th century by the esteemed painter John Lewis Brown, Chateau Cantenac-Brown has one of the most striking properties in Bordeaux. The Tudor style chateau was originally created as a 'folly' and was frequented by many of the great artists of the day, notably Henri de Toulouse-Lautrec. Today, the winery pays tribute to its bohemian heritage by using 100% organic techniques to produce their wines. Chateau Cantenac-Brown called their 2004 vintage ''one of the great vintages of these last years'' and we couldn't agree more! This gorgeous red is packed with soft and silky fruit with hints of red berries and liquorice. Complex and concentrated, it punches well above its price tag.

This old-vine superstar from the acclaimed Aresti family is made from rare but opulently aromatic Gewurztraminer, which thrives in Chile's Curico Valley. It's thanks to Chile that Alsace's most exotic grape variety is regaining the limelight - even though it's so scarce it only accounts for 0.2% of Chile's plantings. Exceptionally aromatic and crisp, this textbook Gewurz is made along very organic lines as Aresti's vineyards are blessed with Eden-like conditions. The old-vine fruit is harvested at night and fermented at low temperature to keep all its enticing character. Spicy, crisp and fragrant with aromas of lychees, limes and rose blossom. This sumptuous, deeply flavoured, barrel-aged gem is an absolute must for claret fans. From a terrific little estate, whose 50-year-old, biodynamically grown vines (think super-organic!) thrived in 2005, ''Bordeaux's best ever vintage'' (Wine & Spirits magazine). The chateau, situated in Saint-Germain-de-Graves has been owned by eight generations of the Duc family since 1850. Current winemaker, Sebastien Duc, draws on the knowledge handed down by his forebears, along with the ''gift of Madame Nature'' as he calls it, to craft this elegant, classically wooded claret. Deeply coloured, brimming with ripe red and black berry aromas, with a touch of cedar wood. Fine oak gives excellent structure, complemented by a long, long finish. Delicious with traditional roast beef.

Chateau Ribeyrolles, near Saint Emilion, sits on the highest point in the Gironde. This lofty position gives superb views and more importantly slightly cooler conditions - giving the grapes longer to ripen and superb concentrated flavours. Fifth generation Chateau owner Michel is keeps the yields of his organic vineyards as low as those of a Grand Cru to produce his delicious Merlot-led wines. Deeply coloured with aromas of ripe berries and classic cassis and plum flavours. Ageing in French barriques has added complexity and a spicy, leather character. Perfect with grilled red meats such as Entrecote Bordelaise (grilled rump steak with butter and shalotts in a red wine sauce).
